Swift Prepared Foods (SPF) expanded the food services industry in Columbia, Missouri with a new $200 million home for Principe Foods. The 325,000 sq. ft. production facility will produce high-quality Italian meats and charcuterie. Emery Sapp & Sons (ESS) was subcontracted by general contractor Stellar to perform the grading, underground utilities, and paving work for the facility.

The client contacted ESS in March 2021 and aimed to begin construction by July. Understanding speed of delivery was a topic priority for Stellar and SPF, ESS teams quickly assessed the project and crafted an impactful plan of action to meet the upcoming start date. ESS worked hand-in-hand with Stellar to design through site issues and develop alternate concepts to the original design.

Once construction was underway, crews continued to adapt and pivot as a rainy summer and supply chain setbacks forced alterations in the project schedule. Despite challenging conditions, the project team was able to conduct deep utility work, install 84,000 tons of base rock, grade and excavate 215,000 cubic yards of material, apply lime stabilization, as well as perform all asphalt and concrete paving services for the building site.

Working in partnership with Stellar, the ESS project teams continued to adjust and completed the project a month before schedule, allowing SPF to accelerate their production opening date.
